Barbecued Ribs in a Mustard and Orange Marinade

INGREDIENTS

A delicious marinade, which goes great with pork. The combination of the orange and slow BBQ cooking results in tender meat with a sweet and mildly spicy edge.

1 kilo pork ribs
250g Dijon mustard
Juice of 2 oranges
5 cloves garlic
Salt

PREPARATION

In a large dish, mix the mustard and the juice of the oranges.
Peel and crush the garlic, add to the dish, mix well and season.
Add the ribs to the marinade and leave for about 2 hours in the fried, turning occasionally.
Cook on the BBQ for about 6 - 10 minutes each side.

This marinade is also ideal to be used with pork fillets or chops. Don't be afraid of using a good quality strong mustard as the end result is mellow and fruity.
