Spanish Recipes

These pages are dedicated to some of the best recipes collected ( tried and tested ) over the past 25 years of living in Spain.

I really have been lucky living in Spain in as much as I have tried many of the famous dishes Spain has to offer, thankfully many of these recipes have passed onto me by my Spanish family, my tios, tias and amigos.

Many a lazy day was spent eating and drinking in an old cortijo near Malaga where we cooked wholesome honest dishes using only the freshest of local ingredients. Everything from rabbit and free range partridge and other small birds we had hunted that day to fresh home grown fruit and vegetables, country herbs including some types of weeds and locally produced olive oil. It was all usually washed down with wine straight out of the barrel before retiring for a mammoth siesta in cool interior bedrooms to escape the midday heat.

One of the great pleasures of living in Spain is the superb diversity of good quality food and produce which should be embraced by all who visit these fair shores as it will undoubted leave a culinary mark on your life for ever.
